What is corn syrup?

Corn syrup, or glucose syrup, is a type of food additive made by the partial hydrolysis of corn starch. The enzyme responsible for this hydrolysis is α-amylase. On the other hand, the dark corn syrup has a warm brown color and a strong taste than light corn syrup. It's a combination of corn syrup, molasses, salt, caramel color and flavor, and sodium benzoate as a preservative. Corn syrup is used as either a thickener, sweetener, or humectant that helps hold moisture in foods while maintaining their freshness.

What is high fructose corn syrup?

High-fructose corn syrup (HFCS) is a processed form of corn syrup. To make it, the regular corn syrup is completely hydrolyzed to glucose. Most of the glucose is then enzymatically converted into fructose. The enzyme responsible for this conversion is glucose isomerase. Processing the corn syrup into high-fructose corn syrup reduces the viscosity while increasing the sweetness. Therefore, high fructose corn syrup is more water soluble than regular corn syrup.

The amount of fructose can vary at the end of processing; therefore, there are different qualities of high fructose corn syrup based on the amount of fructose present. The main use of high fructose corn syrup is as a sweetener, replacing regular table sugar because of its intense sweetness compared to regular Corn syrup. Therefore, most breakfast cereals and soft drinks contain it.
